Chicken Spinach Pizza


This is what I made for dinner tonight!  You may think it looks a little pale, but that is because it doesn't have any sauce on it, never fear, it is still super yummy!  It sounds really complicated by the recipe title, but is very easy and quick to make!

Ingredients:
1 pre-made pizza dough ( I use the pillsbury thick crust kind)
6 oz chicken breast
McCormick Mediterranean seasoning blend
6 oz shredded Mozarella cheese
3 oz sliced provolone cheese
3 TBS olive oil
2 tsp minced garlic
2 C fresh spinach, washed and drained



Preheat oven to temperature dictated by the pizza dough directions. Warm a skillet with 1 TBS olive oil and trim the fat from the chiken breast, sprinkling it generously with the seasoning blend.  Cook the chicken over medium heat until cooked through (be careful not to over cook it because it will dry out.) Use about 1 TBS olive oil to lightly grease the bottom of a cookie sheet.  Place the pizza crust on the cookie sheet and spread it out to the edges, being careful not to tear it.  Place the pizza crust in the oven for approximately  minutes and then remove it from the oven.  Use another TBS olive oil to lightly grease the top of the pizza crust and then use a larger turner and carefully turn the pizza crust over.  Drizzle the last of the oil on the top of the pizza and then spread out the minced garlic over it, then add the mozarella, then the provolone cheeses.  Set this aside. Slice the chicken breast into 1/4 slices and arrange over top of the pizza, then add the raw spinach.

Place the pizza back in the over for approximately 10 minutes, until the spinach has started to wilt down and the edges of the crust are golden brown.  Remove from oven, sprinkle with a drizzle of olive oil if desired and a touch of salt.  Cut and serve piping hot!

  1. you could always get some alfredo sauce and use for the sauce. just an idea :)

  2. I could, but it had plenty of flavor without it, and adding alfredo sauce would add a ton of fat, calories and sodium!
